Sort of panzanella from my farmers market trip yesterday. Tomatoes, cucumber, spring onion, bread, pesto, Pecorino Romano, salt and pepper, olive oil, vinegar. Spread some pesto on bread (I'm obsessed with this) broil or grill until lightly browned. Cut tomato, cucumber and onion, season with salt and pepper. Douse with food olive oil and vinegar (I used balsamic and red wine) shave some pecorino Romano on and enjoy.
