Nectarines macerated in gin. These specimens were not quite as ripe as I'd hoped, so I made a gin and lime simple syrup to break them down a bit. In a small saucepan combine some gin, sugar and a sprig of rosemary. It will probably start flaming. Don't panic. Just shake the pan and try blowing on it (seriously--like a birthday cake). You don't actually have to heat the gin if you don't mind some alcoholic nectarines. My kid might eat some, which is why we went through the trouble. Add the zest and juice of a lime, and pour over the fruit. Let to sit a few hours, ideally. The syrup left in the bowl when you're done will make an excellent cocktail addition if you're so inclined. #summer
