Yiouvetsi - Using a cast iron dish with lid or similar.
On the stove top, brown lamb pieces (I used 6 chops) in butter and olive oil along with 1 diced onion and garlic to liking. Spice lamb with sriracha, chicken and steak rub prior to browning. Whatever spices you like really.
Add 2 tins chopped tomato, 2 cloves, a few bay leaves, quarter stick cinnamon and 1 and a half cups of water along with large pinch dry oregano. Put the lid on and put in the oven @ 180. Cook for at least one hour then add rice noodles (1 cup). Add more spice, one cup of water and a dollop of butter. Stir well. Let the mixture cook for another 40 minutes in the oven, stirring 2 or 3 times in between.
Serve with grated Parmesan.
