Mixed Berry Galette in a Corn Meal and Coconut Oil Crust
Mix berries with sugar and lemon juice (Strawberries and Blueberries here) and set aside.
Preheat oven to 400*.
For the crust: combine 1 cup White Corn Meal, 1/3 c AP Flour, approx 6 Tbps Coconut oil with a pastry blender. Once beaded, add ice cold water 1 Tbsp at a time, stirring, until dough starts to stick together (I used approx 4-5 Tbsp)
Roll dough into a disk, wrap and refrigerate for about 30 minutes.
Roll out flat on parchment paper, add berries in the middle and fold in edges to make traditional galette shape. Take entire galette and place in a pie plate (keeps juices from running everywhere when baking).
Brush crust with melted butter and sprinkle with sugar. Bake at 400* until golden, approximately 45 minutes...
