Arabic Coffee-Style Zucchini Muffins with Chocolate Chips! Cream butter, yoghurt and sugar together. Add eggs one at a time along with vanilla extract. Add mix of AP flour, baking powder + soda, espresso powder, cinnamon and cardamom in 3 increments. Fold in shredded zucchini (all liquid squeezed out). Bake at 350 F for 20 min. Fluffy loveliness!
