Summer Tapas

Sauté all the ingredients in olive oil with a splash of Pernod until hot and bubbly except the shrimp, feta and herbs
Transfer to baking dish and nestle the shrimp and chunks of feta into the tomato mixture
Bake until the shrimp is firm and pop under the broiler for a minute or two
Throw a handful of chopped parsley and fennel fronds on top
Eat with crusty grilled bread
