Smoky quinoa and bean salad

Combine cooked quinoa, a diced yellow bell pepper, a diced red onion, a sliced bunch of spring onions (scallions), black beans, chickpeas, and a handful of torn coriander (cilantro). For the dressing, whisk four parts olive oil, three parts sherry vinegar, two parts smoked chipotle sauce, two parts lime juice, one part soy sauce and season to taste.
