for crispy baked wings: (1) marinate overnight in desired seasonings or sauces; (2) allow to dry out and come to room temperature; (3) toss lightly with baking powder immediately before roasting; (4) roast on low temp, 300 degrees F for the ones pictured above, on a wire rack for 30 minutes; (5) bring temp up to 425 F, flip wings, and roast for 15 minutes; (6) flip back over and roast for final 15.
