I often include both pickled and regular, just-cooked beets in salads - inspired, if I remember correctly, by a Paul Virant recipe. Here, I simply brought the two together for a side served with grilled chicken the other night. Rosemary red wine beet pickles + farmers’ market beets, drizzled with olive oil and sprinkled with Maldon salt and a few grinds of mixed peppercorns. Perfect summer fare! ;o)
