Siobhan Megan uses up the whole carrot with these roasted beauties. She says to fry the carrots on high for 5 minutes and then finish them in the oven at 500 degrees F for 12 minutes more. Top with carrot tops, basil and carrot top pesto (walnuts, lemon, basil, carrot tops, olive oil).
