Zucchini Parmesan crisps from Smitten Kitchen (see link - thinly sliced zucchini, dipped in an egg white wash then a blend of Parmesan, Panko breadcrumbs, salt, and pepper, before baking in a hot oven). Served with a sauce of Greek yogurt spiked with Sriracha and soy sauce.
