Breakfast scramble with leftovers. I slightly mashed a leftover baked sweet potato and threw it in a pan with onions and fresh garlic and a little butter. Threw in red pepper and Italian seasoning, salt and pepper. Once the potatoes were a bit crispy on the skins, I put in some thawed spinach and canned tomatoes. In the last minute I tossed in whole olives and some mozzarella. Removed from heat and topped with a scrambled egg swirled with fresh basil (felt like soft scramble today).
