Summer Fruit Baked Oatmeal. I suspect most reading this are not making baked oatmeal these days. But hey, this is the Bay Area, where the mornings have been chilly lately. I had my oven on for baking bread, so I made this, too.
Layer in a well buttered 8 in.² baking dish the following: 1 1/2 cups of old-fashioned oats, a tablespoon of brown sugar, a teaspoon of mixed spice, 2 cups of chopped nectarines and/or peaches, 2 cups of fresh blueberries, and another 1 1/2 cups of oatmeal.
In a medium bowl, beat 3 eggs with a cup and a half of milk, and a generous splash of vanilla. Pour that over the layered ingredients.
Mix together in a small bowl 2 heaping tablespoons of brown sugar, a teaspoon of mixed spice, and generous handful of chopped pecans. Sprinkle that on the ingredients in the pan and top with 1 to 2 tablespoons of butter cut into tiny cubes. Bake at 375 for 35 - 40 minutes, tenting with foil after 25 if the nuts seem to be darkening too much. ;o)
