A great way to use extra summer corn: these are based on a recent Food52 recipe, linked below. I added a touch of ground cumin, which you could not taste on its own, but I do think it made these a bit tastier. I used the minimum amount of flour and just sort of dropped the batter into the hot oil; the egg kept everything intact pretty well. I made a quick salsa with chopped grape tomatoes, lime juice, a touch of olive oil and finally chopped cilantro, as we had these as our main for dinner, and I decided they needed some kind of condiment.
