On a cutting board, chop roughly equal parts of panko and chopped salami together until they're well integrated. In a small skillet, heat a small amount of olive oil, then toast the salami and panko, stirring a few times, until crispy and golden. Once cool, add lots of chopped parsley.
Meanwhile, chop together finely grated zest from 1 lime and kosher salt. Chop / slice equal parts peach, tomato, cucumber -- then season with lime salt and let sit.
When ready to serve, toss together peach, tomato and cucumber with lime juice, extra virgin olive oil, and Aleppo pepper. Shower with breadcrumbs.
