As I was lowering this egg into the pot of boiling water, I was applauding myself in my head for my mastery of the soft boiled egg, shell in-tact. Mid praise, I watched as the white run out of the side of the cracked shell and bubble up into a sculptural blob. So poetic.

Radish, Persian cucumber, green onion, feta, 7 minute messy egg, whole grain mustard, lemon, olive oil, salt, pepper, and herbs (parsley, mint, basil, dill).
