Dijon Potato Salad with Hard Boiled Eggs and Dill Pickles

The perfect side for a summer BBQ!

1.5 lbs red new potatoes, cut into chunks
1 tablespoon white wine vinegar
1 tablespoon Dijon mustard
Salt and pepper
2 tablespoons olive oil
1/2 cup chopped fresh parsley
5 chopped dill pickle spears
3 chopped hard boiled eggs

Boil the potatoes in salted water about 15-20 minutes. While potatoes are boiling, chop your ingredients and mix your dressing. To make dressing, whisk together vinegar, Dijon, olive oil, and salt and pepper to taste. Once potatoes are done, combine pickles, hard boiled eggs, and dressing with them in a large bowl. Put salad in fridge to cool. Once cool, add in chopped parsley and stir to mix. Adjust seasoning if necessary. Enjoy!
