Save cilantro stems to make
1/4 cup minced cilantro stems
1/4 cup grape seed oil or other neutral oil
1/2 tsp kosher salt
Place minced cilantro stems and salt in a heatproof bowl.
In a small pan, over medium high flame, heat oil till simmering.
Pour hot oil over cilantro stems and mix.
Store in a sterilized jar. Keep refrigerated. Good over steamed chicken, fish, vegetables, potatoes, grains, pasta or anything you can think of.
