Soba with Zucchini and Beet Zoodles, Chard and Kale
Prepare soba per instructions and toss with olive oil flaky sea salt, fresh ground pepper and red pepper flakes and set aside. Gently sauté zucchini noodles in olive oil with garlic (optional) and remove from pan. Sautée greens and a little more garlic, season to taste (salt and fresh ground pepper) and remove. Sautée beet noodles. Be careful not to overlook veggies.
Plate all as you prefer and top with some good extra virgin olive oil, fresh parsley and more hot pepper flakes (optional). If not #vegan top with lots of fresh grated Parmesan. (My kids like this topped with seared salmon.) Eat! #notrecipe #zoodles #vegetarian
