Shakshuka (for one)
Sautée a clove of garlic, half a large onion, and two small bell peppers over medium high heat until vegetables are softened and brown in spots. Add some chopped tomatoes, tomato paste, and harissa to taste and continue to cook until tomatoes are soft. Create little wells for your eggs, add eggs, cover and cook until whites are set. Top with cilantro and eat from the pan!
