Add diced pears to hot skillet with oil and cook briefly. Add quarter cup of sugar and quarter cup of water. Add pear sauce (or apple sauce) and cook until liquid has reduced and sauce is thick and pears are tender. About 10-15 minutes. Season generously with flaky salt (going for a sweet and salty topping).
Remove from pan and set aside.
Wipe out skillet. Add oil. Cook pork chops on each side until browned and crispy and cooked to 140° (allow to rest to rise to 145°).
Add generous pat of butter to skillet. Once foaming and browning, add chopped kale and season with salt and pepper. Cook until just wilted. Stir in rice (rice will become coated and gloss with whatever butter is left in the pan)
To serve: divide rice and kale among plates, top with pears, and top with pork, sliced on an angle. Enjoy!
