Quinoa with zucchini mint and pistachios ?
250 gr. Quinoa
2 zucchini, thinly sliced
1 garlic clove
2 scallions, thinly sliced
30 gr. Pistachios
Salt and pepper
Cook the quinoa in salted water for 10-12 mins.
Cook the zucchini in a large skillet with 2 tb spoon olive oil, for about 5 mins. Then add the garlic and cook for another 5 mins. Add salt and pepper to taste.
Add the quinoa, the scallions, the pistachios. Stir in the mint leaves and lemon juice to taste, and serve.
