Sofra Inspired Chicken Salad.

Braise 2 chicken breasts with bone in, water to cover with 1 tsp. turmeric, 1 diced onion,1 diced celery stalk, 1 diced preserved lemon and some saffron simmer.
Braise until chicken is done then turn off heat and add Israeli couscous and allow to absorb broth. Remove chicken and shred. Once couscous done return shredded chicken, 1/2 cup each chopped walnuts and golden raisins, chopped scallions, and cilantro. Dress with some olive oil and lemon. Sprinkle with sumac. Eat.
