Nectarine Claufouti is so easy & delicious. I made it gluten free but you can use regular flour. Just slice about 3 cups nectarines(no peeling necessary!) into oiled 9" pie plate. Preheat oven to 425. Combine 2 cups milk (I used almond milk), 1/4 cup sugar, tsp each vanilla & almond extract, pinch salt in saucepan. Heat to barely simmering, turn off heat. In bowl whisk 1 egg & 1/3 cup + 1 TBSP flour( I used half oat & half almond flours). When smooth whisk in 2 more eggs. Slowly whisk warm milk mixture into flour/egg mixture.. Pour over nectarines in pie plate. Bake about 35 - 40 minutes til custard done. Sprinkle with a little sugar & crushed almonds. Put under broiler for just a few minutes til almonds toasted & sugar carmelizes. Cool for about 20 minutes before slicing. Good warm or cold?
