Split banana peppers in half. Remove seeds. Sauté 1/2 onion, hot Italian sausage. Remove from heat. Cool. Stir in a few handfuls Romano cheese and some chopped parsley. Salt and pepper to taste. Drizzle pan with olive oil. Rub peppers with olive oil. Stuff with the meat mixture. Arrange in dish. Sprinkle about 1 cup diced tomatoes over along with any remaining sausage mixture. Top with grated mozzarella and some more Romano. Bake 350 for about 45 minutes. Buon appetito!! ???
