Socca, farinata, call it what you will! Mix chickpea flour with water, salt, olive oil, and parsley. Throw in some Dukkah if you've got it! While that sits (at least thirty minutes) caramelize onions in olive oil and butter. Add harissa and cumin, jalapeño and coriander. Add ribboned chard leaves and corn! Mix in pickled onions! Why not?? Plus preserved lemon. Broil socca in preheated cast iron, then top with vegetables and ricotta. More Dukkah too!
