Summer rolls: quickly dip rice paper wrapper in water, lay flat, stuff with kale/carrots/cukes/cabbage/tofu, roll tightly, serve with sushi rice.

Tofu: cut extra firm tofu into thinner cutlets and lay on paper towel, lay more paper towel on top and press down to drain water, preheat cast iron skillet with olive oil, salt and pepper both sides of tofu, cook until golden and crispy on both sides, about 7 minutes per side.
