Peach and Blueberry "Shortcake"
For when the peaches are too perfect to cook... For the shortcake I combined oat and corn flour (ratio approx 2:1), flax meal, cold chopped (vegan) butter, date sugar, egg, splash of vanilla, baking powder and salt. Mixed it together by hand until it can together as a dough allowing some chunks of butter to remain visible. Press into a parchment lined baking pan and bake at 425F for about 15 minutes.
Blueberries were simmered in a touch of lemon balm syrup, you may use maple syrup- just a splash.
Slice up peaches.
Top shortcake with warm berries and their sauce and layer on peaches! Top with your favorite nuts, ice cream, coconut whip, cashew cream... And, eat! #notrecipe #vegan #glutenfree #dessert #breakfast #dairyfree #delicious
