personal triumph post. today marks the first day I've taken a bite of fish since the age of 5, when my parents traumatized me by forcing me to eat an entire salmon steak. it took over 2 hours and a boat full of stubborn, tiny-human tears. fast forward 22 years later, and meet this beautiful pan-seared Arctic char atop a mountain of Parmesan-roasted green beans. all grown up.
prepped the char with a little salt and pepper before marinating the flesh in a blend of olive oil, fresh lemon juice, lemon zest, roasted garlic, and finely chopped fresh rosemary for half an hour. pan-seared over medium-high heat, skin side down, for 3 minutes before flipping to finish, a final 2 minutes.
