Pumpkin and feta pasta with spice baked chicken.
Had some left over roasted pumpkin so mashed half (approx 1/4 medium pumpkin) with some chilli flakes and chicken stock powder and a spoon of pasta water.
Covered chicken breast with paprika, cayenne and olive oil and baked at 250 C for about 25-30 mins. Added some chopped red onions to baking tray towards end.
Stirred pumpkin mash in with cooked curly fettuccine and added red onion and left over cooked pumpkin, diced. Added feta, pine nuts, and fresh thyme over the top.
