Course 1 of my Solo Progressive brunch - moving like a sloth on a steamy Sunday, so eating a wonderful brunch all afternoon in simple courses.
Chilled sliced peaches with Halva-like drizzle: slice and pit a cold peach. Mix tahini and whipped lavender honey in a small bowl - about a tablespoon tahini and big teaspoon of honey. Thin with a teaspoon or so of water - adding a few drops at a time, until you have a thick but drippable consistency. Use the spoon to drizzle the peach wedges with the dressing. Top w chopped mint and a pinch of sea salt. If you have the patience, put in freezer to set for 10 minutes. (Bonus: you can eat the peach bites with the cold plate on your lap!)
