Homemade ricotta, surprisingly easy!
Heat 8 cups homogenized milk and 1/2 tsp of salt in a heavy saucepan over medium-low heat. Cook for about 50 minutes, stirring occasionally. Add 1/3 cup white vinegar and stir slowly about 3-4 times. Take off the heat and let it rest for 20 minutes then skim off the curds into cheesecloth and let train for another 20. Enjoy!
