Took seasoned ground beef and rolled it in flour tortillas with cheddar cheese, black beans rinsed and drained, chopped green onions, salsa and cilantro. Place in 9x13 pan sprayed with olive oil then pour a thin layer of enchilada sauce, I made my own, in the bottom of the pan and place the rolled enchiladas in the pan, top with remaining enchilada sauce and cheese. Cover with foil and bake in a 350 degree oven for 30 mins. Remove from oven, remove foil. Served topped with sour cream and cilantro.
