Lightened up protein cheesecake cupcakes! Crush graham crackers and put in bottom of 10 muffin cups. Mix 10oz cream cheese (I used trader joe's nondairy), 1 cup no fat Greek yogurt, 2 eggs, 2 rounded scoops of orgain vanilla protein powder, a few tablespoons of maple syrup, and a dash of vanilla extract. Batter will be thick. Pour into cups and flatten with a spatula. Bake at 350 for 20mins, then turn oven off and leave in for another 50mins or so. Take out and let cool an hour, then refrigerate.
