Grilled Ginger Soy Lime Flank Steak with Arugula

Quick, easy, flavorful. Try it!

1.5 lbs flank steak
1/4 c olive oil
1/4 c soy sauce
1/2 c lime juice
3 tbspn light brown sugar
4 peeled and smashed garlic cloves
4 slices of fresh ginger root
5 sliced green onions
3 oz arugula
Salt and pepper to taste

Whisk olive oil, soy sauce, lime juice, and light brown sugar until emulsified. Add garlic, ginger, and green onions. Pour over steak. Allow to marinate 1 - 2 hours, flipping steak halfway through. Bring steak to room temperature before grilling. Take steak out of marinade, but do not discard marinade. Pat steak dry and grill over medium heat about five minutes per side. While steak is grilling, pour marinade into pan and bring to a boil. Once boiling, remove from heat and set aside. When steak is done, allow to rest 10 minutes before slicing. Top with salt and pepper and some handfuls of fresh arugula. Spoon the marinade over the top as dressing, and toss arugula in it. Serve and enjoy.
