Super veggie grain mix!
Cook grain mix according to directions (I used a mix of brown rice, quinoa, and farro in diluted chicken broth). In the meantime chop up onion, tomato, bell peppers, cucumber, parsley, and marinated artichokes in oil. Once grains are ready add to veggies along with Greek seasoning (I used cavenders), red pepper flakes, lemon juice, and some olive oil from the marinated artichokes. Salt and pepper if needed. Would be yummy with some feta cheese too!
