The first restaurant in which I worked was a classic French restaurant but on the bistro side we cooked a la minute all the time. It is my favorite way to cook because if you have done your prep food can be on the table in no time. Prep is the key. I often blanch vegetables(that can be) or even peel potatoes in a stolen moment during the day. I make the dinner fit my schedule so when it comes time it goes fast.
