Toasted rye and caraway seed bread with spring onion scrambled eggs and homemade tomato salsa

I dice up a red onion and fry it in a pan with olive oil until it almost starts to caramelise then add chopped up ripe tomatoes. I then season it, add some basil or parsley and sometimes some chilli flakes then leave it to boil down for a while until it becomes thicker and rich in flavour! :)
