Summer Sweet and Spicy Rainbow Carrot & Corn Soup
Sauté Onion, Garlic, Leek, Carrots, fresh grated Ginger, fresh chopped Lemongrass & Caraway Seeds in Olive Oil. When softened add Vegetable Broth. While it simmers add sliced Rainbow Carrots, fresh Corn, Cayenne Pepper, Vegetable Salt & Cilantro. Don't overcook the rainbow Carrots & Corn. Their sweetness combined with the Lemongrass and heat of the Cayenne Pepper is delicious.
