Watermelon gazpacho soup
Blend two parts watermelon and 1 part chopped tomatoes together with a serrano pepper. Add red wine vinegar and olive oil and pulse. Add chopped red onion, seeded and chopped cucumber, minced fresh dill and salt and pepper to taste. Add a few shakes of cayenne, ancho chile and jalapeño powder and stir. Add fresh watermelon chunks . Serve chilled topped with feta cheese and enjoy.
