Slice of whole grain bread adapted from the Minimalist Baker (so easy, try it: http://minimalistbaker.com/the-easiest-whole-grain-seeded-bread/)
2 slices of buffalo mozzarella
Diced grape tomatoes
Pine nuts and shaved parm for garnish
Heat a pan with a tsp of olive oil. Add 2 tablespoons of pesto. Once hot add tomatoes for 2-3 minutes. Crack egg in pan and allow to cook to desired doneness.
Butter the bread and sprinkle with garlic salt. Broil until toasted. Put fresh mozzarella on top and broil until slightly melted.
Top with egg, additional pesto, pine nuts and parmesan.
