// Sunday Morning Granola //
A casual gluten-free, dairy-free, everything-and-anything mocha coconut granola.
Grab whichever seeds, grains and other things you have hanging around in jars and bags in your pantry (or, cluttering up kitchen counters in this case). Quinoa flakes, oatbran, buckwheat groats, hemp seeds, flax seeds, pepitas. Lots of raw cacao, a spoonful of instant coffee.
Melt some coconut oil with coconut sugar or any granulated melty sweetener you like and mix in to your dry ingredients, adding enough to hold everything together in clumps.
Spread out onto a baking sheet, breaking up the bigger clumps. Bake in a medium oven until it's dry and crunchy, keeping an eye on it and giving it a little shake every now and again. When it's pretty much done, sprinkle some coconut flakes on top and bake for a minute or so until toasted. Let cool and serve with hot coffee and cold yogurt or almond milk.
