Haloumi risotto with herbs. Sautée grated zucchini and risotto rice in olive oil, before adding hot stock one ladle at a time. When the rice is cooked through and creamy, add grilled green beans, fried eggplant and grated pecorino. Top with fried haloumi slices, chives, basil and pecans. It's #fodmap friendly to boot!
