One pot summer farro:

Make a pot of farro following package instructions. I used the Trader Joes kind.

Saute a small onion and two cloves of garlic in olive oil. Add a can of chickpeas, a tablespoon of tomato paste, three cups of fresh baby arugala and two sliced squash. Saute for about ten minutes till the squash cooks through. Sprinkle chilli powder, salt and pepper to taste.
