Made this quick flourless mini cornbread in the toast r oven. Too hot for the oven but cornbread is so great with summer grilling. Whisk buttermilk, coarse cornmeal, baking soda and baking powder, egg and salt--heat a small cast iron skillet until sizzling hot at 425, pour in batter bake for 15 minutes or until cooked through. If you like your cornbread sweet add a little sugar to the batter.
