Inspired by the other tofu scrambles on food52, I decided to do my best to recreate the frozen Amy's tofu scramble pockets I used to eat, and make one that has even more "good for you" items. This is extra firm tofu with kale, onion, sweet potato, mushroom and pepper sauteed with tumeric, red pepper, cumin, paprika and salt and pepper. Topped with a dollop of plain Greek yogurt and a side of fresh strawberries. Not quite what I wanted but still filling and delicious. If anyone has some pointers I'm open to assistance! Thinking I should have added garlic...?

I'm pretty sure it has nutritional yeast in it. Garlic sounds good. I've tried putting small amounts of no chix broth powder. Tiny bit of Braggs or soy sauce?
