Egg Noodles, shrimp, carrot shreds, edamame, scallions and pea shoots.
Do yourself a favor and buy peeled & deveined shrimp & pre-shredded carrots for ease here (it is lunch after all). Boil pasta (save a little water) Sauté shrimp in butter/olive oil, sliced garlic & season with old bay & pepper. Turn. Add in white wine, lemon juice and pasta water and reduce. Add in pasta and allow to cook for another minute. And in veg. Pour into bowl and garnish with scallions and pea shoots Enjoy!
Note: if you're taking this on the road, pull pasta out and port separately from shrimp & joux. Put veg on top of pasta and bring pea shoots in a baggie.
