Summer corn chowder! Sautée onions, garlic, a few red potatoes and a small butternut squash with paprika and cumin. Add corn, 2 cups each of vegetable stock and milk. Simmer until all veggies are cooked through. If you want, take an immersion blender to the pot. Topped with fresh chives!
