Farmers Market Frittata
Preheat oven to 350*
Whisk together 4 eggs with salt, pepper and a splash of whole milk. Stir in parmigiana, chopped parsley, chives and basil.
In a well seasoned cast iron skillet, sautée zucchini, English peas and sweet corn until tender. Fold in egg mixture and transfer to the oven. Bake until set and golden, about 30 to 40 minutes.
