So many great posts of enchiladas...I was inspired!

Cheese enchiladas very (Not)Recipe....corn tortillas softened in enchilada sauce (I had some from Trader Joe's which is really good), fill with grated cheddar, Monterey Jack, asadero and queso blanco cheese, a bit of finely chopped shallots and olives. Roll up gently, top with more cheese, sauce and olives and bake in a 375 F oven for about 35 minutes until browned and bubbly. I pulled out my well used and loved metal baking pan which made the enchiladas crunchy and brown...these were gone in one sitting!
